This bright, crisp salad is the perfect antidote for the gray winter months.  When the weather is as dry as it's been, I tend to crave more hydrating foods, and roasted winter vegetables just don't cut it.  I need something juicy and refreshing, albeit seasonal.  At this time of the year, there are some wonderful citrus fruits available: meyer lemons, blood oranges (and oranges all sorts), grapefruits, and other colorful fruits such as pomegranate and several apple varieties.

I made this salad along with some mushroom toast with roasted butternut squash, smashed right on the toast.  It made me smile to look at such a lovely palate of colors on my plate.  Which leads me to another thought...this is a great crowd-pleasing dish.  Joshua took leftovers to work the following day and several his colleagues commented: what a gourmet dish!  The good news is, it's easy enough to throw together and does look quite fancy if I may say...

I was very excited when I came upon this recipe from The Bojon Gourmet.  Her blog is inspiring to me, with her creative photography and delicious recipe ideas.  I also like the story of how she started her own website (Bojon, "no job" reversed) when she was out of a job and found passion sharing her cooking and photography with others.

I altered the recipe a bit by withholding the shallots in the dressing (as they bother my stomach), and also the radishes--the crunch from the apple, fennel, chicories and walnuts sufficed.  I also swapped out the pomegranate seeds for blood oranges.  I sliced the chicories into more of a slaw instead of keeping them whole, and added watercress to temper the bitterness from the endive and treviso.  Whichever direction you go, I'm fairly confident that all roads will lead to deliciousness.

optional salad spinner, or clean towel to dry off washed vegetables and fruit

cutting board

chopping knife

large serving bowl or plate

salad spoons

optional peeler/shaver for parmesan

 whisk or fork for emulsifying dressing

small bowl or jar for mixing dressing

measuring cups and spoons

 

//Ingredients//

vinaigrette

3 tablespoons high quality olive oil

1 tablespoon apple cider vinegar (or to taste if you prefer more tang)

pinch of sea salt, such as Maldon

fresh ground pepper to taste

salad

1/2 a head of treviso, or one head of raddichio, sliced thin into a slaw

2 endives, core removed, sliced lengthwise and chopped into thin slices

2 cups watercress

1 small fennel bulb, cored and thinly sliced

1 blood orange, peeled and cut into rounds

1 medium apple, cut into thin rounds and quartered

1/2 cup walnuts, broken up with your hands

sea salt flakes

fresh ground pepper to taste

optional fresh shaved parmesan to serve

 

//Directions//

In a small jar or bowl, whisk together the ingredients for the vinaigrette until emulsified.  Mix some of the vinaigrette into a large bowl with the sliced treviso or radicchio, endive, fennel and apple. 

Next, gingerly mix in the watercress.  Serve on a platter or wide salad bowl.  Top with sliced blood oranges, walnuts, a pinch of sea salt flakes and fresh ground pepper, and shaved parmesan.  Lightly toss the ingredients once more and taste.  Adjust with more vinaigrette sea salt and pepper as needed.
