{vegan, gluten-free, dairy-free, soy-free, nut-free}

Avocado toast needs no formal recipe, but it deserves to have the limelight.  Ever since I was gifted Erin McKenna's Bread and Butter, I have been making homemade bread every week and eating avocado toast like it's my job.  It's so simple to make and just soothes the soul.  I'm already getting excited to whip up some avocado toast again for lunch tomorrow...nom nom

Avocados are nutrient-rich, high in potassium, folate and vitamins C and E.  They're great to incorporate in a lunch because they provide healthy fats that keep you sustained and satisfied through that afternoon slump.  I like my toast burnt--and then back it up a bit.  Then, I spread a hefty layer of Trader Joe's Tahini Sauce on top, or my favorite hummus or baba ganoush.  If I'm feeling like a salty note, I spread a thin layer of tapenade between the tahini, or sauce of choice, and avocado.  Finally, I top it all off with some creamy, sliced avocado, salt and pepper, and my favorite hot sauce.   If you eat eggs and want some additional protein, top it all off with a fried or soft-boiled egg, the possibilities are unlimited!

1 large avocado

Trader Joe's Tahini Sauce or any sauce of your choice (i.e. baba ganoush or hummus)

4 pieces of sliced bread

sea salt and fresh ground pepper to taste

*optional hot sauce and tapenade



1. Toast your bread to your liking.  Meanwhile, slice the avocado in half and remove the seed.  Make thin slices in the avocado halves (keep skin on the avocado for this). 

2.  Remove the bread from the toaster or oven.  Spread tahini sauce, or a sauce of your choice, onto each slice of bread.  If you are using tapenade, spread a thin layer of tapenade over your tahini sauce.  With a spoon, scoop out a quarter of avocado onto each slice of bread.  Finish with fresh ground pepper and sea salt, and perhaps a bit of hot sauce.  Enjoy!
